August Healthy Living Article - Health Benefits of Water

Most of us know that our body is made up of mostly water and that we should drink 6 to 8 glasses a day but can you name all the benefits of staying hydrated?

Water is essential to proper functioning of your body. It transports nutrients to your cells, moisturizes air in your lungs, helps with metabolism, protects our vital organs, regulates body temperature, removes waste and toxins from our kidneys and liver and moisturizes and protects our joints.

What are the signs of dehydration and what are some ways that you can make water taste better and drink more of it?

Symptoms of dehydration:
  • dark yellow or orange urine - Your urine should be pale yellow or clear in color
  • dry skin - Skin is the largest organ in your body and therefore needs its fair share of water
  • you are always thirsty - I think this one is self-explanatory =)
  • hunger - Many times thirst is mistaken for hunger because your thirst mechanism is weaker. So next time your are hungry in between meals, try drinking water instead
  • fatigue
Here are some waters to make water a little less boring

1. Add fresh fruit
Citrus fruits like lemon, lime and orange are obvious choices but also consider adding other fruits to give your taste buds a boost. Next time, add crushed raspberries or strawberry and watermelon slices. Cucumber and mint is also a very refreshing combo.

2. Use juice
Try drinking more tart juices and make sure that the juice you choose is all natural with no added sugar or artificial sweetener. Natural fruit juices contain many nutrients, vitamins and antioxidants but don't over do it when replacing juice with water intake.

3. Add some bubbles!
Drink sparkling water, mineral water or carbonated water. If you don't like the taste you can add just a little bit of juice or fruit slices.

4. Make flavored ice cubes
Use some of the ideas above to make flavored ice cubes and add that to your water to freshen things up.

Here is one last tip. Avoid drinking liquids with artificial sweeteners. I say this not because of any negative side effects but because more and more it seems that consuming artificial sugars actually increases your appetite for sugar even more, causing you to eat more calories elsewhere.

Enjoy the rest of what little summer we have left in Vancouver and make sure to stay well hydrated!

August Healthy Recipe - Chicken Piccata

Ingredients:

4 125g chicken scaloppini (chicken breast, pounded thinly)
1 tablespoon plus 1 teaspoon all-purpose flour
3 teaspoons extra-virgin olive oil
2 garlic cloves, finely chopped
1/2 cup low-sodium chicken broth
1 lemon, juiced (plus zest for garnish)
1 teaspoon white wine vinegar
2 tablespoons chopped fresh parsley
1 tablespoon capers, drained
1 tablespoon unsalted butter
Baby arugula for garnish
salt & freshly ground black pepper
(whole-wheat angel hair pasta or roasted potatoes on the side)

Directions:

1. Season the chicken with salt and pepper and sprinkle with 1 tablespoon flour.

2. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat until very hot; cook the cutlets until opaque throughout, 1 to 2 minutes per side. Transfer the cutlets to a plate. Reduce the heat under the skillet to medium.

3. Add the remaining teaspoon oil and garlic to the same skillet; cook until fragrant, about 1 minute. Whisk together the broth, lemon juice and 1 teaspoon flour, and add to the pan. Simmer sauce until reduced and thickened, 2 to 3 minutes.

4. Stir in the vinegar, parsley and capers. Swirl in the butter until sauce is shiny and slightly thickened.

5. Serve chicken with the sauce.

6. Toss the arugula and freshly grated lemon zest with a light drizzle of olive oil and season to taste with salt and pepper, scatter over chicken.

7. Serve with pasta or potatoes as desired.
