May Healthy Living Article - Skin Health

No organ in our body receives as much attention or love (or $$$) as our skin. Proper care of our 22 square feet of skin can keep us feeling and looking young. Here's a quick anatomy lesson to help you understand the goals of proper skin care.

The deepest layer of skin is called the subcutaneous layer and it is the fatty bit that acts like both a cushion and insulation. On top of this is the dermis, made of collagen and strong elastic fibres. The dermis is where you'll find blood vessels, glands & follicles, nerves and sweat glands. Finally, you have the top layer, the epidermis, which is tough and gets sloughed off and replaced by new cells every 5 weeks or so.

The glands in the dermis produce an oily, waxy substance called sebum that lubricates and waterproofs the epidermis. The quick natural turnover of our top layer allows this oily sebum to travel to the top and protect our surface layer. So when choosing our skincare products we need to find products that will help retain moisture and lipids without stripping our skin of our natural protective layer.

Here are a few tips to help keep your skin healthy, hydrated, smooth and looking its best:

  1. Use a gentle exfoliating scrub to remove dead skin once or twice a week
  2. Don't bathe or shower in overly hot water and pat dry afterwards (If you like to take frequent baths, try adding a 1/4 cup of olive oil to your bath water)
  3. Apply moisturizer immediately after showering while your skin is still damp
  4. USE SUNSCREEN and for goodness sakes REAPPLY every few hours throughout the day! During the summer months, whether it's sunny or cloudy, you are exposed to UV radiation and damage from the sun (which you cannot see) is the main cause of premature skin aging. An SPF 30 is plenty.
  5. If you are prone to acne and/or oily skin, the summer heat can cause increased oil production. Use a cleansing wash or toner with glycolic or salicyclic-acid to help keep your skin exfoliated.
  6. Drink adequate amounts of water. Drinking 6-8 glasses of water a day healthy and hydrated.
  7. Don't go overboard on skin care products. Start with a cleanser, toner, sunscreen and moisturizer and add other products only if you are trying to treat another specific issue.

May Healthy Recipe - Healthy Lasagna

Lasagna is like pizza, (because everyone loves pizza!), but with all that bachamel, cheese and noodle, it is not the most healthy option. I've adapted a traditional recipe and substituted with healthier options without sacraficing any flavor. Hope you enjoy!

Ingredients:

1 (28 oz) can crushed tomatoes
1/4 cup dry red wine
1/2 cup chopped fresh basil leaves, plus some whole sprigs
2 cloves garlic, minced
1 (16 oz) container low-fat cottage cheese
1 (16 oz) container part-skim ricotta cheese
1 (10 oz) box frozen chopped spinach, thawed and squeezed dry
2 scallions, chopped
1/4 teaspoon freshly grated nutmeg
400g lean sweet Italian-style turkey sausage, casings removed
1/2 cup finely chopped onion
10 sheets of lasagna noodles (try using Catelli Healthy Harvest brown noodles)
1 1/2 cups part-skim shredded mozzarella cheese, 6 ounces
Kosher salt and freshly ground black pepper
Pinch crushed red pepper flakes

 

Directions:

1. Preheat the oven to 350*F degrees.

2. In a small pot bring the tomatoes, wine, whole basil sprigs, garlic, red pepper flakes to a simmer and cook until slightly thickened, 10 minutes. Add salt and pepper to taste and set aside.

3. Puree the cottage cheese in a food processor until smooth. Add the ricotta, spinach, 1/4 cup chopped basil, scallions, nutmeg, salt and pepper and pulse until just combined. Set aside.

4. Heat a nonstick pan with canola oil over medium heat. Cook the sausage and onion, breaking it up with a wooden spoon into small pieces, until the meat is browned and the onion tender, 10 minutes.

5. Assemble the lasagna: Mist a 9 inch by 13 inch baking dish with nonstick cooking spray. Spread 1/2 cup tomato sauce on the bottom of the prepared baking dish. Top with noodles, half the ricotta mixture, half the sausage and 1/2 cup shredded mozzarella cheese. Repeat layers with sauce, noodles, remaining ricotta and sausage and 1/2 cup mozzarella cheese. Top with remaining noodles and sauce. Cover with aluminum foil and bake until the noodles are tender and the sauce is bubbling around the edges of the pan, about 1 hour.

6. Uncover, sprinkle with remaining mozzarella cheese and continue to bake until melted, 10 minutes.

7. Let stand 15 minutes so the lasagna can set. Sprinkle with remaining basil and serve immediately.
